Jota Tanaka started working for Kirin Brewery Co. in 1988 before moving into product development and quality control in 1995. Since then, Tanaka San has been monumental in the development of Fuji whisky along with Four Roses Bourbon which he also oversees the development and quality of.

The Mt. Fuji distillery (or Fuji Gotemba distillery as it was known until 2020) was completed in 1973 as a rare joint venture between spirits giant Seagrams, Kirin and Chivas Brothers from the UK. Since that year a lot has happened. Seagrams collapsed, the whisky market saw a huge period of contraction and then in more recent times, the boom of Japanese whisky. The fact that Mt Fuji distillery came out of these huge market challenges is testament to the versatility of the equipment, made up of 3x pairs of pot stills, a multi unit column still with 5x columns, a kettle and a doubler.

In 2023 Tanaka San helped develop the marvellous 50th Anniversary single malt, a fusion of single malt whiskies from the 1970's, 1980's, 1990's, 2000's and 2010's. We are incredibly proud to host Tanaka san for this amazing line up of whiskies which cover the entire history of the distillery.
