As part of their annual trip to Australia the distillery team at Kanosukewill join us to share special insights about one of Japan's newest and most innovative distilleries. From a family of Shochu makers in 1883 Komasa Jozo quickly became the leading brand of Shochu in Japan's temperate southern region of Kagoshima. However Komasa Jozo is not any old Shochu maker having produced the very popular "Mellowed Kozuru" in 1957. Mellowed Kozuru is a 6 year old cask matured shochu, which means this company have well established skills in distilling and cask management.

The distillery took the leap to become distillers of whisky in 2015 and distilling began in 2017 with 3x copper pot stills and worm tub condensers. With the first whisky being released in 2021 amongst a host of other Japanese distilleries doing the same, the point of uniqueness that Kanosuke holds is it's focus on maturation in ex-shochu casks and it's secret weapon, the Hioki distillery.

Hioki distillery is also part of Komasa Jozo company but it's stills are designed for making shochu. Not dissimilar to the shape and size of a Scottish single malt whisky still the differences being they're made from stainless steel and can run under vacuum. In another twist, the mash bill is 90% unmalted barley and 10% de-hulled malted barley. When all of these elements are matured and assembled we have what is a rare, all Japanese distilled blended whisky.

We'll try all of these amazing elements being produced at Kanosuke's distilleries and be guided through all the intricacies that make this category leading innovator a real standout and the one to watch into the future.
